Tilapia has had a bit of a reputation problem. It's spent years being written off as the boring middle child of the fish counter - not as flashy as salmon, not as prized as cod. But after a wave of requests from customers, we've brought it back into the range, and it's time to give this quiet all-rounder a fairer hearing.

What does tilapia actually taste like?

Mild. Genuinely mild. Tilapia won't hit you with a strong "fishy" flavour, which is exactly why it works so well as a weeknight staple. Think of it less as a fish with its own bold personality and more as a blank canvas - it takes on whatever seasoning, marinade, or sauce you pair it with, making it a forgiving option if you're cooking for fussy eaters or just don't want dinner to be a big production.

What's it like to cook with?

Tilapia fillets are firm and flake apart easily once cooked, so you don't need to be a seafood expert to get a good result. It holds together well in a pan, under the grill, or in the oven, and it cooks quickly — ideal for a fast midweek meal rather than a weekend project.

Is tilapia sustainable?

This was the sticking point that kept it off our shelves for a while. Tilapia's sustainability record varies hugely depending on where and how it's farmed. We only relaunched it once we could source it through responsible, high-standard farming practices, so you can order it without having to second-guess where it came from.

How much does it cost?

What should I make with it?

Because tilapia is so mild, it's a great candidate for recipes that lean on other flavours doing the heavy lifting:

  • Baked in foil parcels with chilli, ginger, and spring onion
  • Blackened in a Cajun spice rub and served in tacos
  • Simmered in a coconut curry sauce
