Our sashimi range is prepared with organic Scottish salmon which is raised in the best possible conditions resulting in superb salmon. Our sashimi cuts below are from different part of the fish. The upper and lower belly are self explanatory with the upper belly being a thicker cut. The belly salmon is higher in fat and creamier than the 'back' or grade 1 strips. The sake salmon back strips are cut from the loin and a good starter size pieces of salmon sashimi. The salmon saku blocks are also from the loin of the salmon, they are larger and suit serving multiple people.
