
The Romans virtually worshipped this fish and I do too. Red mullet rarely grows very large - 2lbs/900g would be quite a good size. But its culinary reputation is very large indeed, up there with turbot and Dover sole. Red mullet's white flesh is slightly oily, giving it a buttery flavour. Blend its liver to a sauce for a supreme taste experience. Really!
