Produced from Baerii (also known as Siberian) sturgeon, this caviar is produced by a respected, family run, Italian caviar farm. We have worked closely with them for nearly ten years. Many think baerii is similar to oscietre, but we reckon it's closer to sevruga. Our caviar is fresh, not frozen - the best before date will be at least three week's ahead when you receive it (and more typically eight weeks).
50g would give you two decent servings or could be spread over about 15 handsome canapes.
