Saku is just the sushi-bar name for a block cut square for slicing, and it's the easiest way to do this at home — you're not butchering a whole fish, just running a sharp knife through something that's already been done for you. Slice the tuna and salmon thin, on a slight angle, and finish each piece with a few beads of keta roe for the pop of salt and colour a sushi counter would charge you extra for.

We'd only add: a sharp knife matters more than any of us like to admit here — a blunt one tears the fish instead of cutting it. (Sharpening stone not included.)
