Akami is the deep-red, lean cut that most tuna sushi is made from – what you picture as tuna before anyone mentions otoro. It comes from the big propulsion muscles above the spine, which is why it is firm, and it has a distinct umami flavour that the fattier cuts trade for richness.
All our bluefin is super-frozen at -60°C and kept there until it leaves us, which is what protects the texture and colour. We pack each block in thawing paper so it defrosts gently on its way from your freezer to the chopping board.
