Patagonian toothfish, otherwise known as Chilean sea bass, is a lovely dense oily fish. It has a great buttery feel with delicate white flakes. It is a resiliant fish that can handle South-East Asian spices. Our Patagonian toothfish come from a fishery on one of the Kerguelen Islands. This fish was once heavily subjected to illegal fishing. But now, the main stocks seem well regulated with six certified MSC fisheries. Ours is MSC certified.
