Product Information
  • Sustainably raised British Rainbow trout
  • Recommended by Jamie Oliver and Yottam Ottolenghi
  • Sometimes contain bones

Rainbow trout are normally harvested at portion size, which is around half a kilo. But this celebrity farm on the River Itchen makes a point of growing its fish to three kilos, which enables us to get several bone-free portions from each fish. We offer fillet steaks, fillet portions and misshapes. The colour of the flesh is a vibrant orange that is spectacular to look at. The quality from this farm is outstanding and it's not just us saying that - Jamie Oliver and Yottam Ottolenghi think so too. The farm is a sustainable producer of trout and are defined as a 'net producer' - for example, they use under a tonne of fish food to raise a tonne of trout.

We also sell thicker fillet steaks from the same fish.

Sustainability - Our rating 8/10

Chalkstream trout have a low impact on the surrounding environment. They have been working to reduce the amount of marine-based feeds. Chalkstream also for Global Gap farming practices.
