The lemon sole will forever live in the shadow of the unbeatable Dover sole. But it’s a fine fish, and you do not need a mortgage to enjoy it. We have a wonderful recipe for sole meuniere with clams, you can use these lemon sole fillets as a substitute. All packs contain two boneless skin-on fillets. This is a very handsome fish - its skin has tiny pixels ranging from darkish brown to almost yellow - a pointillist's delight. The white flesh has delicate sweet taste and cooks in a trice. Pan fry or grill this fish is best cooked simply.
